Doneness Notes

A steak ordered well-done loses most of its tenderness, especially leaner cuts like the sirloin, which have little fat to fall back on. Filet mignon is best ordered medium-rare for the same reason. If texture matters, ask for medium, and describe what you want, since “medium” can read differently from kitchen to kitchen.
