Which Steak Fits You?
You want the most tender cut
Flo’s Filet is a center-cut filet mignon that cuts with almost no resistance. It comes in 6 oz and 9 oz.
You want rich, marbled flavor
The Outlaw Ribeye (bone-in) and the Ribeye (boneless) both carry heavy marbling and open-flame char.
You want a firmer, bolder bite
The New York Strip is firmer and heartier than the filet, with a smoky crust and a juicy center.
You want a lower price
The Renegade Sirloin is the leaner, least expensive steak on the list, starting at $18.29.
You can’t decide between lean and marbled

Doneness Notes
A steak ordered well-done loses most of its tenderness, especially leaner cuts like the sirloin, which have little fat to fall back on. Filet mignon is best ordered medium-rare for the same reason. If texture matters, ask for medium, and describe what you want, since “medium” can read differently from kitchen to kitchen.
