Understanding the Cuts
Filet mignon is the mildest, most tender cut and is best ordered medium-rare since it has little fat to fall back on. Ribeye carries the most marbling, which is why it tastes richer even at higher temperatures. New York Strip lands in between, firmer and bolder than the filet but leaner than a ribeye. Sirloin is the leanest, least expensive option. The T-Bone and Porterhouse are the same idea at two sizes, a strip and a filet on either side of a bone.
